Read  "DOIT.log" 
Its in every archive you have, with the config files (.lst)

But the gist is

to update just run in the base directory (the one that contains [hts-cache])
Httrack
  it will ask you to update
Httrack --update
  just doesn't ask
Httrack <with different options>
  Will ask to update with those new options
