When you start HTTrack click on SET OPTIONS and look at SCAN RULES.

Mine looks like:

+*.png +*.gif +*.jpg +*.css +*.js -ad.doubleclick.net/*
-mime:application/foobar

so there's no *.doc in there. Then you need to click on INCLUDE LINKS and
follow the setup there to add *.doc
